These Tropical Cookies are gluten-free, and feature a delightful mix of hazelnuts and chocolate pieces that are easy to prepare and quick to bake. They are perfect as a tropical escape for a cold winter day, especially when accompanied by a hot beverage and a good book!
Ingredients
1 egg
½ cup coconut sugar
1 teaspoon vanilla extract
½ cup Tropical Spread
½ cup almond flour
½ cup chopped hazelnuts
½ cup chocolate pieces (or chocolate chips)
Directions
Preheat the oven to 350F and line the baking sheet with parchment paper.
In a large bowl, use a hand mixer to mix the Tropical Spread, coconut sugar, and egg.
Once mixed, add the almond flour, coconut flour, and vanilla extract.
Using a spatula, stir in the hazelnuts and chocolate pieces. I leave a few so that I can place them on top of the cookies at the end.
Roll the mixture into balls and then flatten them on a cookie sheet. These cookies do not spread too much.
Bake for 12 to 15 minutes.
Let the cookies cool completely before sprinkling with sea salt and eating.
