Ingredients
Kataifi Base
220g Kataifi Dough
55g Butter/Coconut Oil
Pistachio Filling
230g Pistachio Butter
100g White Chocolate
45g Tahini
30g Vegetable Oil
¼ Tsp Pistachio Extract (Optional)
Chocolate Coating
750g Dark Chocolate (250g per chocolate bar)
Directions
Preparing the Kataifi Base
Slight the kataifi dough into small pieces using a knife, as shown in the video.
Melt the butter or coconut oil, and mix it with the kataifi dough to coat evenly.
Spread the coated kataiifi evenly on a baking tray and bake in a preheated oven at 170°C (340°F) for 15-20 minutes, or until golden brown and crispy. Let it cool completely.
Preparing the Pistachio Filling
In a mixing bowl, combine the pistachio paste, tahini, melted white chocolate, vegetable oil, and pistachio extract. Stir until smooth and well-combined.
Assembling the Chocolate Bars
Once the kataifi base has cooled, gently mix it with the pistachio filling. Set the mixture aside.
In the meantime, melt the dark chocolate using a double boiler or in the microwave in short bursts. If you prefer, temper the chocolate to prevent it from melting too easily in your hands.
Creating the Chocolate Layers
Fill the moulds with the melted chocolate to form the first layer. Gently tap the mould to remove any air bubbles and allow the chocolate to coat the bottom evenly.
Turn the mould upside down and tap it gently to remove excess chocolate, leaving just a thin layer.
Add the pistachio-kataifi mixture on top of the chocolate layer. Press down gently to make it compact.
Finishing the Chocolate Bars
Cover the pistachio filling with another layer of melted chocolate, ensuring that the filling is fully encased.
Refrigerate it for about 30 minutes, or until the chocolate hardens.
Serve!
Once the chocolate has set, remove the bars from the mould and enjoy your Dubai Chocolate - rich with flavour and perfect for any occasion!
